Rebel Recipes: Here’s a yummy chicken spaghetti as you get ready to watch Ole Miss beat Georgia Tech!

OXFORD, Miss. — When it’s still a little too warm for soup, but fall is knocking on the door, it’s time for a cheesy casserole. In my kitchen, one of the most important staples for football season is Velveeta cheese.  Note that no substitute will do. This is a situation where you must buy the name brand. Additionally, I prefer the white Velveeta (Queso Blanco).

The recipe for this week is Chicken Spaghetti. It’s a crowd pleaser and easy to prepare ahead of time to be ready for our 6:30 kickoff.

Chicken Spaghetti

Ingredients

-16 oz box of penne noodles, boiled and drained
-Meat pulled and chopped from 1 rotisserie chicken
-2 cans Rotel tomatoes, thoroughly drained
-8 oz sour cream
-16 oz Velveeta cheese Queso Blanco, cubed

Directions

1) Mix all ingredients except Velveeta in a large bowl.
2) Pour into greased 9×13 casserole dish.
3) Evenly distribute Velveeta cubes throughout.
4) Bake at 375° for 25-30 minutes until melty.
