Rebel Recipes: Enjoy Black Bean Soup as Ole Miss Opens Season vs. Georgia State
OXFORD, Miss. — Rebel fans, we’re back! There are lots of questions heading into this season. How will we fare without Jaxson Dart? Will Coach Kiffin call the plays? Can Coach Golding’s defense continue its upward ascent and dominance?
One thing you don’t have to ask is what you’re making for dinner. This week, we have a delicious black bean soup. Serve with tortilla chips or cornbread, with sour cream, shredded cheese, sliced avocados, and/or lime wedges.
HOTTY TODDY!
Black Bean Soup
-1 sweet onion, sauteed until translucent
-4 15 oz cans black beans, rinsed and drained
-1 lb smoked sausage, chopped (kielbasa)
-2 4 oz cans diced green chiles
-2 16 oz jars salsa verde
-2 tbsp unsweetened cocoa powder
-2 tsp cumin
-2 tsp garlic powder
-salt to taste
-2 cups chicken broth
Combine all ingredients in a stock pot. Simmer over medium low heat until hot for 30 mins. Smash some of the beans against the side of the pot. Until desired thickness is reached.
