Rebel Recipes: Beat Furman and Kick off the 2024 Ole Miss Season with Delicious Peach Cobbler

OXFORD, Miss. — The long nightmare is over, and I don’t mean election season. Football is back!

This week, the Rebs take on Furman, who hails from Greenville, SC. As my husband, a born and raised South Carolinian, likes to point out, South Carolina actually produces more peaches per year than Georgia. SC is affectionately known as “The Tastier Peach State.”

Fittingly, this week’s recipe is for a delicious peach cobbler. Enjoy it with ice cream while we hopefully savor a Rebel victory!

Peach Cobbler recipe via Tastes Better from Scratch (with minor tweaks)

 

Peach filling:

-6 peaches, peeled/cored/sliced into small pieces
-3/4 C sugar
-1/4 tsp salt
—Stir and combine.
—Cook over medium heat for 5-10 minutes until the sugar dissolves, and mixture is juicy. (Pour out/discard approximately 1/2 cup of juice.)

Batter:

-6 tbsp melted butter
-1 C all purpose flour
-1 C sugar
-2 tsp baking powder
-1/4 tsp salt
-3/4 cup buttermilk
-ground cinnamon

Directions

1) Heat oven to 350°.
2) Place melted butter in the bottom on 9×13 glass pan.
3) Pour batter mixture atop butter, and smooth.
4) Pour peach mixture over batter.
5) Sprinkle cinnamon on top (to taste).
6) Bake for 40 minutes until golden and bubbly.
